First, numero uno, on my list are the Arnold Sandwich Thins... these things ROCK!!! They are thin little rolls, either whole wheat or multi-grain, and they are only 100 Calories each!!! I pretty much eat 1 - 2 a day, one in the morning on my egg-white, spinach, and turkey sausage b'fast sandwich, and the other w/ my veggie bocca burger. Bocca burgers are the one food that I LOVE but forgot about for a while. It's funny... I like them so much, I would rather eat my Bocca burger than a greasy fattening burger (although, once in a while I'm sure I'll have to indulge myself, but only for a really awesome burger, from like Taco Mac or something).
Berries... thank goodness it's springtime, because I've been eating my fair share of berries! All kinds, blue, rasp, straw and black!!! I've been mixing them together in a big beautiful bowl and will spoon them over some light cool wHip for a healthy yummy treat that mostly satisfies my sweet tooth. Mary gave me this great recipe for Cocoa Almonds that is sososoooo good, but kinda a pain in the bootie and the good news is that I've discovered that they actually sell Cocoa Almonds at the store - SCORE!
Pickled Beets is another food item that I LOVE that I usually only eat if I'm at a great salad bar, but I decided to pick up my own little jar of pickled beets that had been a fantastic accoutrement to my Bocca Burger sandwiches for lunch.
I'm hosting book club tonight and I wanted to come up with some food offerings that are healthy without anybody knowing that they are good for you. Mary and I put our heads together and came up with a super dooper delish menu consisting of Satay Chicken w/ peanut sauce, Thai Cole Slaw, veggies and hummus, and lastly Angel Food Cake w/ berries and Light Whipped Cream!!! Sounds like an amazing winner that anyone would love - counting calories or not. The great part is that (unless the Diva Readers are reading this blog) no one would even know that this is a healthy smattering of food. There will also be Peach Bellini's which I'm sure are not all that healthy but you've got to splurge a little in life, right? Whatever, I'll just eat a salad for lunch.
One thing I've come to realize is that I'm a little obsessed about calories... I'm concerned about counting every single bite I put into my mouth and I'm not sure if it's a good thing or a bad thing. I'm going with good cause those nutrition labels are on packaging for a reason - right? In fact, instead of obsessing about the next sweet thing I could eat, in the past, I'm not obsessing about the most food I can possibly eat for the least amount of calories. Did I mention that both my Egg-white B'fast Sandwich and my Bocca Burger w/ Cheese are both around the 250 calorie range? That's AMAZING!!!
As usual, bootcamp has been kicking my A$$, although I feel like I say everyday has been the hardest workout yet. Could be, or maybe I'm learning how to push myself a little more every day. Still can't run, but I'm getting there. Waking up at 5:30 seems to get a little easier and easier every day. I'm thinking that I might have to retire one of my pair of exercise pants cause I feel like I spend more time pulling them up than I do anything else - that's a good thing, right? I may try and push a few more weeks in em. My jeans are HANGING ON ME!!! I can literally take my pants on and off w/ out unbuttoning and zipping - Thank God for belts!
